Try 'Em. You'll Like 'Em

This is a recipe that came from Hungry Girl and I loved them!!

Mexi-Licious Pot Stickers

Ingredients
8 oz raw lean ground turkey
1/2 tbsp taco seasoning mix
1 small onion
1/4 cup taco sauce
1/2 cup fat-free refried beans
1/2 cup shredded fat-free cheddar cheese
Small square wonton wrappers (found near tofu in the market)

Directions
Spray a large skillet with nontick spray, and bring to medium-high heat on the stove. Add turkey, and cook and crumble until browned and fully cooked, about 5 min.

Reduce heat to medium and sprinkle turkey with taco seasoning. Add onion and taco sauce. Stirring occasionally, continue to cook until onion has softened, about 5 min.

Transfer mixture to a large bowl. Add beans and cheese and stir to combine. Allow to cool completely. Meanwhile, wash skillet.

Lay out some wonton wrappers flat on clean, dry surface. Spoon a heaping 1/2 tbsp of filling into the center of each wrapper. Moisten all four edges of each wrapper by dabbing your fingers in water and going over the edges smoothly. Fold the bottom left corner of each wrapper to meet the top right corner, forming a triangle and enclosing the filling.

Press firmly on the edges to seal. Repeat with remaining wrappers and filling.

Once all wontons are assembled, spray skillet with nonstick spray and return to medium-high heat on the stove. Working in batches and beginning with the flatter sides down, cook wontons until crispy, 3 to 4 min per side. (Between batches, remove skillet from heat and re-spray.)

Serve and, if you like, top with salsa and sour cream. Enjoy!

First...Hair Cut

You know, quiet children = trouble. And Brexton never ceases to disprove it. I was in the bathroom getting ready to go places and I didn't hear him. I finished what I was doing and went out to the living room and sat down. Brexton was just playing around with his toys and I began to take in my surroundings. I saw the scissors that I left out on the floor. I don't remember when I saw Brexton's hair, but when I did, I couldn't decide on whether I should be upset with him or giggle a little. I tried both. LOL. It was pretty hilarious. Anyways, I had to take pictures because its his first self-given hair cut. Love this little guy and his adorable personality.

To fix this silly disaster, I had to cut his hair lots shorter than I usually do. LOL. He looked bald. But he is always cute.

Easter Fun

We had a whole week of fun before Easter Sunday. Some of my in-laws came from Salt Lake City on Wednesday the 4th. The Shamo's had the family Easter egg hunt on Friday the 6th. We went to a park in the Coral Canyon area. It was a pretty windy day so I stayed in my car with Adelyn while all the kids played at the park. It came time for the hunt and I went to help Mark and Brexton find some eggs.
On Saturday the 7th, the Jacobson's came over to our house and we did an Easter egg hunt in our backyard. I would say that Brexton hit the egg jackpot at this hunt. He filled two baskets! He had so much fun looking for eggs.
Brexton did an 'egg'cellent job gathering up his eggs!!

Mark left for work after lunch and when he got home, my parents came back over and we celebrated Mark's birthday which was Easter Sunday. I bought a yummy strawberry boston cream cake.
We only had 8 candles. 2 of them represented 20 plus 6 candles made 26. But Mark was turning 28.
So we lit a regular candle that had 3 whicks to make up the rest of his age. It was kinda comedic. Mark and Brexton, together, blew out the candles.

 On Sunday, Mark and I woke up early to get Easter baskets ready. We laid out Brexton and Adelyn's Easter outfits. They both looked so cute in them.

Conquering Warheads...Or Not!


A couple days ago, Mark and I were shopping at Wal-Mart and ran across some sour Warheads. Mark wanted to get them for the sure enjoyment of giving them to Brexton to see how he would react. Well, we have it on video and in pics how our son reacted to the EXTREME SOUR warheads!

This was the first one we gave him. Took him a little minute, but he realized he didn't like it when he stuck the whole thing in his mouth. LOL! Mark sucked the rest of the sour off and gave it back to Brexton. He really liked it and decided he wanted another one. Mark and I being the FUN and SILLY parents we are, gave him another without sucking the sour off. Here are some pics that capture how this one went.

 Again, we sucked the sour off and gave him the sweet candy. He wanted another one even after all that. In the end, Mark got his fun and we have a great story!

Little Miss Smiley!


For the last 2 weeks or so, Adelyn has begun smiling. And last night, I was even able to get her to laugh by tickling under her chin. She is getting so strong. She holds her head up real well and her legs are strong enough to hold her body up when we hold her. Adelyn is also getting bigger everyday! Love watching my little princess grow up!

Sibling Love

Brexton LOVES his little sister! He likes to give her kisses and hugs. When she cries and is fussy, he tries to comfort her by patting her stomach. When she sneezes, Brexton says "Bless you, Adelyn. My goodness!" Its so cute! And we can tell that Adelyn loves her big brother too, because she smiles at Brexton lots!

Adelyn's Blessing 02.05.2012

    
There is a song written by a morman artist that talks about the 3 white dresses that a girl will wear in her life: when she's blessed as a baby, baptised and gets married. Adelyn has just completed phase 1 of 3. And she looked absolutely beautiful. Can't wait for phase 2 and 3! Well...yes I can. LOL!

Here is her blessing:

Heavenly Father,
     In the name of Jesus Christ and by the power of the Holy Melchizedek Priesthood which we hold, we take this infant into our arms to give her a name and a blessing. The name which she shall be known on the records of the church will be Adelyn Crystal Shamo.
     Adelyn, it has been such a joy having you in our home already at this time. You have brought so much of the spirit with you, and have also brought laughter and happiness. We bless that you will continue to be a great and happy child who will bring laughter and happiness to those around you. You are a very special spirit sent by your loving Heavenly Father to bless, to aid, and to help those around you, especially your family. You will be able to help them through difficult times and in everyday life. We bless that you will be strong in living the gospel principles that have been taught to you in heaven and that will be taught to you here in this life. We bless that you will be a shining example to all around you and can fulfill those callings which have been preordained to you. We bless that you will live up to the good name which you already bare.
     Adelyn, you are a special daughter of Heavenly Father and he wants you to always know that. We bless that you may always turn to him in prayer for comfort, for relief, and for decision making; especially when the time comes for you to take a worthy young man to the temple. We bless that you may have the opportunity to be a choice daughter in raising wonderful children of your own with the knowledge that Heavenly Father has bestowed on you and given you daily. Learning can always be taught to those around you, especially your family.
     Your family loves you; your mom, dad, brother and future siblings. They will need you in this life and will look to you as a wonderful example to be in this life.
